Reindeer Cupcakes

Oh, Betty Crocker. How I love thee. For my birthday from my aunt Julie, I received the Cupcakes cookbook from Betty Crocker that utilizes box cake mixes, pre-made cans of icing, all the goodies you have in your pantry to make fabulous, adorable cupcakes. One of my friends who is not a good baker or cook helped me to decorate the cupcakes, so if you have children this would be a fun recipe to make with them for a children’s holiday party; they’re fun to look at and eat!

Reindeer Cupcakes

  • Your choice of one box cake mix (I used a basic yellow)
  • One whipped chocolate icing can
  • Egg, oil and water required for the mix
  • Chocolate sprinkles
  • Green gumdrops (or M&Ms)
  • A box of red hots
  • Twisted pretzels
  • Mini marshmallows

Preheat oven to 350. Place twenty four cupcake liners in two muffin tins. Prepare and bake the yellow cake mix as directed on the box. Bake for the magical 19 minutes. Cool the cupcakes completely. Spread chocolate icing over the cupcakes, sprinkle first with chocolate sprinkles to make ‘the fur’ of the reindeer. Take the twisted pretzels and break them in half, placing them near the back of the cupcakes for ‘the antlers.’ Cut the mini marshmallows in half, placing underneath ‘the antlers’ for ‘the eyes.’ One of my friends noted that ‘the eyes’ look slightly demonic without ‘the pupils’ and suggested a drop of chocolate syrup. Place a green M&M or gumdrop in the center beneath ‘the eyes’ for ‘the nose.’ Place a red hot for ‘the nose.’ Eat them up!
